Scallop with Chicken Cubes
Ingredients (serve 4)

Methods
- Soak dried scallops in warm water for 1 hour before shredding it.
Soak mushrooms in warm water for 20 minutes before removing the
stalks and cutting into halves. Slice the chicken ham. Rinse scallions
and ginger and chop into small. - Blanch chicken thigh in boiling water and cut into small cubes.
- Simmer chicken thigh, ham, mushroom, ginger and scallion together
with Shaoxing wine, cooking oil and sesame oil for 10 minutes. Serve
onto plate. Blanch kalian in boiling water before cutting into halves
and placing them at the side on the plate. - Simmer scallops with oyster sauce under slow fire for 5 minutes.
Thicken sauce by adding flour mixture. Add sauce onto chicken thigh
and ham before serving.

制法
- 将干贝以温水浸泡1小时,拔成细条状。温水浸泡
冬菇20分钟,去蒂,切半。火腿切片。葱和姜用
清水略冲洗,切成小颗粒。 - 鸡腿肉用滚水烫后,切成小块。
- 把鸡腿肉、火腿、冬菇、姜、葱和绍酒、油、麻
油、盐慢火蒸10分钟。排好在碟子上。芥兰在滚
水里烫熟,切半,排在碟子旁。 - 干贝加蚝油慢火煨5分钟,太白粉勾芡,淋在鸡肉
和火腿肉上即成。
